Ingredients
  1. 1/2 cup coconut oil, melted and cooled
  2. 1/2 cup pure maple syrup
  3. 2 eggs
  4. 1 cup molasses
  5. 2 1/2 cups whole-wheat flour
  6. 1/2 tsp. salt
  7. 1 1/2 tsp. baking soda
  8. 1 1/2 tsp. cinnamon
  9. 1/2 tsp. cloves
  10. 3 scoops Organic Plant Based Protein Powder - Vanilla
  11. 1/2 cup pecans, crushed + 1/4 cup for topping
Instructions
  1. Preheat oven to 350 degrees. Grease a large loaf pan.
  2. Stir together oil, syrup, eggs and molasses.
  3. Combine dry ingredients and add to molasses mixture. Blend to incorporate.
  4. Fold 1/2 cup pecans into batter. Spread evenly into loaf pan.
  5. Bake for 30 minutes.
  6. Sprinkle remaining pecans on top of loaf, cover with foil, and bake another 15-20 minutes, until a knife comes out fairly clean.
  7. Let cool 10 minutes; remove from pan and cool completely.

    This gingerbread loaf is incredibly tasty. It exceeded my expectations. I have been eating a slice as my afternoon snack this week. The rest I packed into individual slices and froze them. If it’s just you, I think you’ll need to do this. Otherwise, this loaf can be addicting.
