Meyer Lemon Chia Pudding
- 1 Orgain Vanilla Ready to Drink Protein Shake
- 5 tbsp chia seeds
- 1 pinch kosher salt
- zest 1 meyer lemon (about 1 tbsp)
- 1/2 tsp vanilla extract
- 1 tsp raw honey
- Toppings: additional Meyer lemon zest, toasted unsweetened coconut shreds, crushed pistachios
- Combine all ingredients (except toppings) in a glass jar and stir well until completely incorporated.
- Place in fridge. After 10 minutes, stir again.
- Refrigerate overnight. Before eating, stir to make sure chia seeds are distributed evenly.
- Top with desired toppings and enjoy chilled.
