Ingredients
  1. 1 Tbsp. extra virgin olive oil
  2. 1 large yellow onion
  3. 1 butternut squash (2 1/2 - 3 lbs.)
  4. 1 apple
  5. 1 pear
  6. 4 cups chicken stock
  7. 2 heaping scoops Orgain Sweet Vanilla Bean Protein Powder
  8. 2 tsp. fresh thyme
  9. 1 tsp. fresh sage
  10. 1/2 tsp. cinnamon
  11. 1 Tbsp. curry powder
  12. Dash paprika
  13. Dash cayenne pepper
  14. Salt and pepper
  15. 1/2 - 1 cup Orgain Lightly Sweetened Vanilla Almond Milk or coconut milk
Instructions
  1. Heat oil in a large pan.
  2. Dice the onion and sauté in oil on low heat until soft.
  3. Chop the squash into one-inch pieces and add to the pan.
  4. Add the apple, pear, chicken stock, protein powder and spices.
  5. Simmer until squash is soft, about 15-20 minutes.
  6. In batches, puree until mostly smooth. Return to pan.
  7. Add almond/coconut milk and heat before serving.
