Pumpkin Protein Snickerdoodles Recipe

Ingredients
  1. 3/4 cup unsalted butter
  2. 1 cup brown sugar
  3. 1/2 cup sugar
  4. 1 tsp. pure vanilla extract
  5. 1 cup pumpkin puree
  6. 1 1/2 cups flour (or whole-wheat flour)
  7. 1/2 cup Orgain Vanilla Bean Organic Protein Powder
  8. 1 cup rolled oats
  9. 1 tsp. baking soda
  10. Pinch of salt
  11. White or semi-sweet chocolate chips
  12. Mix of ½ cup cinnamon and ½ cup sugar for rolling
Instructions
  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a standing bowl of an electric mixer, cream butter and sugars until combined.
  3. Add vanilla extract and pumpkin puree and mix.
  4. Add flour, protein powder, oats, baking soda and salt and mix until just incorporated.
  5. Stir in chocolate chips.
  6. Form cookies into 1 1/2" balls and roll in cinnamon sugar.
  7. Bake for 7 minutes or until cookies are firm.
