Sweet potatoes have been linked to longevity – a perfect focus when it comes to long-term New Year’s Resolutions (New Year. Renew YOU!) That’s we try to squeeze them into our diet on the regular. It’s always fun to come up with new ways to enjoy them, and this recipe proved to be as tasty as we’d hoped. Creamy, tangy chocolate and sweet potatoes make for a yummy and healthy combo!

Ingredients
  1. 1 Sweet potato sliced
  2. 1 scoop Orgain Plant Based Protein Powder - Chocolate
  3. 1 cup Greek yogurt
  4. 1 Tbsp honey
  5. Coconut oil
  6. Pomegranate seeds
  7. Pistachios
Instructions
  1. Preheat the oven to 350 degrees.
  2. Slice your sweet potato.
  3. Grease sheet pan with coconut oil and place slices at least ¼ inch apart.
  4. Bake 25min+, depending on how toasty you like your sweet potato toast.
  5. Meanwhile, mix Greek yogurt, Orgain Protein Powder and honey.
  6. Dollop your Chocolate greek yogurt on slightly cooled sweet potato toast and top with pomegranate seeds and chopped pistachios.
